Ingredients
- 1 pork tenderloin, about 1 pound
- 1 teaspoon kosher salt
- 1/2 teaspoon fresh ground pepper
- Blueberry Chipotle Barbecue Sauce
- ½ cup fresh blueberries
- 2 large peaches, chopped
- 2 tablespoons minced red onion
- 2 tablespoons seeded and chopped jalapeño
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons fresh lime juice
- 1 teaspoon raw honey
- ¼ teaspoon kosher salt
- ¼ teaspoon of fresh ground pepper
Instructions
Pork Tenderloin
Preheat a gas or charcoal grill until grates are hot. Spray pork tenderloin evenly with cooking spray; season with salt and pepper.
Place the tenderloin on the grill. Let cook on one side for 5 minutes. Turn tenderloin; brush cooked side with barbecue sauce. Cook 5 minutes more; turn tenderloin and repeat basting process. Continue cooking, turning and basting until a meat thermometer inserted in the thickest portion registers 140°.
Remove tenderloin from grill; let rest for 10 minutes. Slice tenderloin and serve with Blueberry Peach Salsa and more barbecue sauce, if desired.
Blueberry Peach Salsa
In a medium bowl, whisk together lime juice honey, salt, and pepper. Add blueberries, peaches, onion, jalapeño and cilantro; stir to combine. Serve within 1 day.
This salsa is best used immediately, but can be made ahead same day and refrigerated.
