Sweet, juicy watermelon pairs beautifully with salty feta cheese in this super-fast no-cook appetizer. Marinate the feta 3 days ahead if you like, and assemble the skewers just before serving.

Ingredients

  • ¼ cup extra-virgin olive oil
  • 3 tablespoons red wine vinegar
  • ½ teaspoon dried oregano
  • ½ teaspoon ground black pepper
  • 2 (8-ounce) blocks feta cheese
  • 4 cups cubed watermelon (about 1-inch cubes)
  • 6-inch skewers

Instructions

In a medium bowl, whisk together olive oil, vinegar, oregano and pepper. Cut feta into about ¾-inch squares. Add cubed cheese to a small bowl; drizzle with olive oil marinade; toss to coat. Thread cheese and watermelon on wooden skewers. Drizzle with the remaining marinade.
