Ultimate Watermelon Mint Margaritas

With their blushing hue and the perfect boozy balance of sweet-tart flavors, these top-shelf margaritas will be your go-to cocktail this summer. Before adding the mint, place the sprigs in one palm and give them a spirited smack to wake up the flavor.

Ingredients

SERVINGS: 4 Cocktail
  • 8 ounces reposado tequila
  • 4 ounces orange liqueur
  • 8 ounces Fresh Watermelon Juice (recipe follows)
  • 8 ounces Homemade Sour Mix (recipe follows)
  • ½ cup fresh mint leaves, plus more for garnish
  • Lime wedges, sea salt and watermelon wedges, for garnish

Instructions

To a large pitcher, add tequila, orange liqueur, Fresh Watermelon Juice, Homemade Sour Mix and mint. Stir with a wooden spoon, pressing the mint against the side of the pitcher to release its flavor. Rub the rims of four glasses with lime wedges; dip the rims in salt, if desired. Gently fill four glasses with ice, and carefully pour the margarita mixture into the glasses. Garnish with watermelon wedges and more mint, if desired.

Fresh Watermelon Juice

Add 4 cups of cubed seedless watermelon to a blender; puréeuntil smooth. Pour the puréethrough a fine mesh strainer, pressing as needed; set watermelon juice aside. Serve the leftover watermelon pulp to the kids for a refreshing summer treat!

Homemade Sour Mix

Simmer 2 cups water and 1 cup raw organic sugar in a small saucepan over medium heat until sugar is fully dissolved. Transfer the mixture to a large jar and let it come to room temperature. Add ½ cup fresh lemon juice and ½ cup fresh lime juice; stir to combine. Store in a sealed container in the refrigerator for a week or for up to a month in the freezer.

Pro tip: Roll the lemons and limes on the counter with your palm to make squeezing them much easier.
