Ingredients
- 2 large sweet potatoes, unpeeled, cubed
- 2 tablespoons canola oil
- ¼ teaspoon salt
- ¼ teaspoon pepper
- ¼ teaspoon red chili flakes
- ½ cup olive oil
- ¼ cup white balsamic vinegar
- 2 lemons, juiced
- 3 tablespoons honey
- 6 cups Vertical Roots lettuce
- 8 ounces goat cheese
Instructions
Preheat oven to 400°.
Add potatoes to a large bowl and toss with canola oil, salt, pepper and red chili flakes so potatoes are evenly coated. Spread potatoes on lined sheet pan and roast for 25 minutes, flipping half way through.
Make dressing by mixing together olive oil, vinegar, lemon juice and honey.
Place lettuce in bowls, top with sweet potatoes, dressing and goat cheese.
