Apple Pecan Coffee Cake

The warm coffee cake with in-season cinnamon apples is an easy dish to throw together for the holidays.

Ingredients

  • 1 1/2 cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • ¾ cup sugar
  • 6 tablespoons softened butter
  • 2 eggs
  • ½ cup milk
  • 1 teaspoon vanilla
  • 2 medium apples, peeled and cored, cut into wedges
  • ½ cup brown sugar
  • 1 cup chopped pecans, divided (we used Schermer pecans)

Instructions

Pre-heat oven to 325°.

Mix flour, baking powder and cinnamon together and set aside. In a medium bowl beat sugar into softened butter until well incorporated. Add eggs 1 at a time, with beaters on medium, and blend in the milk and vanilla.

Gradually add in the dry mixture until batter is well blended; it will be thick. Fold in ½ cup of the Schermer pecans.

Pour the batter into a 9-inch greased and floured round cake pan and insert apple wedges into the batter. Crumble the brown sugar on top of the batter, followed by the remaining ½ cup of chopped pecans. Bake approximately 30 minutes, until sugar is browned and cake insert comes out clean.
