Biscuits rise, even when the rest of the world is falling apart. And rise Callie’s Biscuits did during the pandemic.
Buoyed by a new PBS television series, “How She Rolls,” which premiered in May, and a forthcoming cookbook, Hot Little Suppers written during Covid, Carrie Morey and her team have indeed kept things rolling over the past 18-plus months.
“We’ve always been good at pivoting, but we really learned to spin and turn a million different ways,” she says.
Even so, opening a new Charlotte location just weeks before lockdown was unfortunate timing, and that store has yet to fully bounce back.
“This year has taught me that you have wins and you have learning moments. If one part of our business doesn’t succeed, that doesn’t make me a failure. I’ll take it in stride and manage it as best we can.”
