Buttery Stir-Fried Turnips with Greens

Thinly sliced turnip roots and their greens soak up all the garlicky, ginger-infused flavors of a classic stir fry in this fast-fix side dish.

Ingredients

  • 3 tablespoons unsalted butter
  • 2 teaspoons peanut oil
  • 1 teaspoon sesame oil
  • 3 turnips, thinly sliced
  • 3 garlic cloves, thinly sliced
  • 1 tablespoon minced fresh ginger
  • 8 firmly packed cups turnip greens, cut into ribbons
  • ½ cup chicken stock
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • Toasted sesame seeds, for garnish

Instructions

In a large skillet, melt butter over medium heat. Add peanut oil, sesame oil and turnips. Cook, stirring often, until turnips are lightly browned, 6 to 8 minutes.

Add garlic and ginger to pan; cook, stirring constantly, for 1 minute. Stir in greens, stock, soy sauce and vinegar. Reduce heat to medium-low; cook, stirring occasionally, until turnip slices and greens are tender, about 5 minutes. Garnish with sesame seeds, if desired.
