Evolution has been a main ingredient in Fallert’s business model from the very start. As one of the first food and beverage entrepreneurs to venture into the Charleston Neck area years ago, she’s never been risk-averse; on top of that she’s incredibly team-forward and a champion of giving back.

That spirit was evident during the pandemic, as Taco Boy distributed hundreds of bags of local produce to laid-off restaurant workers, and created an Employee Relief Fund, among other initiatives.

Meanwhile, Fallert’s been busy “leveling up” the stalwart former Park Café into a reinvigorated Park & Grove, bringing in Chef Ramon Taimanglo from Peninsula Grill.

“We’re evaluating how we operate and position ourselves as an employer, and looking at growth opportunities through a lens of resilience, which we’ve never done before. We’re asking questions like, ‘is our structure dynamic enough to withstand the unforeseeable?’ It’s been a deep, soulful dive,” she says, “but it’s been good for the sustainability of our industry.”
